Bloody mary:
Grilled Flank Steak Roasted cipolinni onions, haricot verts, harrisa jus
5 oz piece of flank steak
3 oz haricot vert beans
4 ea cipolinni onions
3 oz demi glace
2 oz butter
3 oz olive oil
1 oz harrisa paste
¼ tsp bloody mary sea salt
For the onions, in a small sauté pan add 1 oz of olive oil and heat put over medium heat and brown the onions on one side. Flip onions over and place in a 350 degree oven for 5 min, take out of oven and reserve for later.
For the beans quickly blanch them in slightly salted boiling water for 1 min and place in an ice bath till chilled. Pull out and reserve for later.
For harrisa jus place harrisa paste, and demi glace in a small sauce pan and gently warm over medium heat. Once hot, whisk in half of the butter and keep warm.
In a large sauté pan place 1 oz of olive oil and place over medium high heat. Once hot place the steak in the pan and sear on one side for 2 min. Flip steak over and place in a 350 degree oven for 4 min or until medium rare. Pull steak out and let rest for 4 min. place remaining butter in a medium sauté pan and reheat onions, and beans over medium heat. Place beans and onions in the center of a plate. Slice flank steak into 6 pieces and arrange around the beans, spoon harrisa jus over steak and garnish with bloody mary sea salt.
Classic Bloody Mary
2 ounces Finlandia or top-shelf vodka
½ cup all natural V8 tomato juice
2 tsp fresh squeezed lemon juice
½ tsp Worcestershire sauce
½ tsp Tabasco
1 celery stick
1 lemon wedge
2 olives, Bloody Mary Fleur de Sel
1. Combine the vodka, tomato juice, lemon juice, Worcestershire sauce, Tabasco, and 1 cup of ice cubes. Shake the mixture well.
2. Rim a tall glass with Bloody Mary Fleur de Sel salt. Add ice cubes. Strain the mixture into glass.
3. Garnish with celery stick, lemon wedge, and skewer of olives. Salud!
